An effort is under way to establish an endowment scholarship fund in memory of John M. Antun, founder of the UT Culinary Institute.
Wanda Costen, an associate professor in the Department of Retail, Hospitality, and Tourism Management, made the first contribution to the fund this summer. She presented a $1,000 check to Antun’s widow, Lola Antun. The endowment fund will be housed in the College of Education, Health, and Human Sciences.
Antun was an associate professor in the Department of Retail, Hospitality, and Tourism Management from August 2004 until his death in July 2011. He was the founding director of culinary institutes at UT and the University of South Carolina.
He co-authored and contributed to four leading food service and culinary education textbooks, completed twenty-four academic journal articles, and was represented in numerous international conference proceedings and presentations. He also was the founding co-editor of the International Journal of Culinary Science and Technology.
