rftw-large1UT’s Ready for the World Café will continue its tasty travels with another tour of Italy on Tuesday, March 25.

The luncheons are held at 11:30 a.m. on Tuesdays and Thursdays through May 1 in the UT Visitors Center on Neyland Drive.

The café is a full-service international dining experience. Lunch consists of intermezzo or small appetizer, salad, entrée and dessert.

Tuesday’s menu is as follows:

First course: Insalata caprese (simple salad made of sliced fresh mozzarella, tomatoes, and basil) served with homemade pizza bread

Second course: Porcini mushroom polenta cake with sausage ragu

Third course: Veal Milanese with lemon-seasoned arugula and cherry tomatoes

Dessert: Rice pudding with brandied cherries

  • March 27 – France I
  • April 1 – France II
  • April 3 – France III
  • April 17 – Japan (sushi)
  • April 22 – Thailand
  • April 24 – Spain I
  • April 29 – Spain II
  • May 1 – France and Japan fusion

The luncheons are produced through a collaboration of HRT 445 (the Advanced Food Production and Service Management class), the UT Culinary Institute, and the Pellissippi Culinary Institute.
