KNOXVILLE – Mexican and French fare, along with a dash of New Orleans cuisine and some good ol’ Southern cooking, will be featured on the buffet at the Ready for the World Café the week of March 30.

The menu includes apple-a-day pork chops, Mexican fiesta bake, crawfish etouffee, vegetarian cassoulet, red potato and green bean sauté, creamed corn with bacon, and mandarin and feta salad.

Students enrolled in Hotel, Restaurant and Tourism 445, the advanced food production and service management class, plan and operate the café. ARAMARK, UT’s provider of dining services, prepares the food.

Jo Overton is this week’s café manager. She is a senior in political science with minors in hotel, restaurant and tourism and business. Overton, who is from North Wilkesboro, N.C., plans to attend culinary school and eventually open restaurant near the water on the East Coast.

The Ready for the World Café is open from 11:30 a.m. to 1:30 p.m. each Monday through Thursday in the Hermitage Room on the third floor of the University Center.

Diners pay $11 for the all-you-can-eat buffet or $9 for a plate of food to carry out.
